  • 1 egg (for egg wash, optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the pie crust by rolling it out to fit your pie dish and pressing it gently into the dish.
  3. Make the cherry filling by combining pitted sour cherries, sugar, lemon juice, almond extract, cornstarch, and salt in a bowl.
  4. Fill the pie crust with the cherry mixture, spreading it evenly.
  5. Top the pie with the second crust, cutting slits if desired.
  6. Add the egg wash to the top crust for a golden finish.
  7. Bake the pie for 45-50 minutes or until golden brown and bubbling.
  8. Cool the pie on a wire rack for at least an hour before serving.
