Nut-Free Protein Bars

Delicious and energizing nut-free protein bars, perfect for a quick snack or on-the-go breakfast.

Ingredients

  • 1 ½ cups old-fashioned rolled oats
  • ¼ cup oat flour
  • ⅓ cup protein powder
  • ½ tsp salt
  • ¼ cup melted coconut oil
  • ¼ cup maple syrup or honey
  • 1 tbsp brown sugar or coconut sugar
  • 1 tsp vanilla extract
  • 24 tbsp mini chocolate chips (optional)
  • Flaky salt (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8 inch baking dish by lining it with parchment paper.
  3. Mix the rolled oats, oat flour, protein powder, and salt in a mixing bowl.
  4. In a separate bowl, whisk together melted coconut oil, maple syrup (or honey), brown sugar (or coconut sugar), and vanilla extract.
  5. Combine the wet mixture into the dry ingredients and stir well.
  6. Incorporate the mini chocolate chips by gently folding them in.
  7. Press the mixture into the prepared baking dish evenly.
  8. Bake for 20-25 minutes until the edges are lightly golden.
  9. Cool in the dish for about 10 minutes and then transfer to a wire rack to cool completely before cutting into bars.
  10. Optional: Melt additional chocolate chips and drizzle on top, sprinkle with flaky salt.

Notes

These bars are perfect for snacking and can be customized with your favorite add-ins like dried fruits or different protein powders.
