Cherry Pie Bars

Delightfully easy and delicious cherry pie bars with a buttery, flaky crust and a sweet-tart cherry filling.

  • 1 cup unsalted butter (barely softened)
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ¾ teaspoon fine sea salt
  • 21 ounces cherry pie filling (1 can)
  • ½ cup powdered sugar
  • ¼ teaspoon almond extract or vanilla extract (for glaze)
  • 1 tablespoon milk or cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking dish by greasing with butter or lining with parchment paper.
  3. Make the crust by creaming together the butter and granulated sugar until light and fluffy. Stir in vanilla and almond extract.
  4. Mix dry ingredients by whisking together flour, baking powder, and salt. Gradually add this to the butter-sugar mixture until a crumbly dough forms.
  5. Press about two-thirds of the dough into the bottom of the prepared baking dish.
  6. Add the cherry pie filling evenly over the crust.
  7. Crumble the remaining dough over the cherry filling.
  8. Bake for 30-35 minutes until golden brown and bubbling.
  9. Cool completely before cutting.
  10. Prepare the glaze by mixing powdered sugar, milk, and extract until smooth.
  11. Drizzle the glaze over cooled bars and cut into squares to serve.

Notes

Serve warm with vanilla ice cream or chilled. These bars freeze well for up to three months.
