Zucchini Pie

A delightful twist on comfort food, this Zucchini Pie combines grated zucchini with cheese and herbs for a savory treat perfect for any occasion.

Ingredients

  • 2 cups grated zucchini
  • 1 cup grated Parmesan cheese
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 cup chopped onion
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Olive oil for greasing the pan

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grate the zucchini and squeeze out the moisture.
  3. Sauté the onions in olive oil until soft, about 5 minutes.
  4. Mix the eggs in a bowl and add grated zucchini and onions.
  5. Combine the dry ingredients in another bowl and fold them into the wet mixture.
  6. Grease a pie dish with olive oil.
  7. Pour the mixture into the dish and smooth the top.
  8. Bake for 35-40 minutes until golden brown.
  9. Cool for 10 minutes before serving.

Notes

For a crispy top, sprinkle extra Parmesan cheese during the last 5-10 minutes of baking.
