Chicken Enchilada Casserole

A warm, cheesy casserole filled with tender chicken, soft tortillas, and zesty enchilada sauce. Perfect for gatherings or cozy family dinners.

  • 3 cups Cooked Chicken, shredded
  • 810 Corn Tortillas
  • 2 cups Enchilada Sauce
  • 2 cups Cheese, shredded (cheddar, Monterey Jack, or a blend)
  • 1 small Onion, diced (optional)
  • 1 cup Bell Peppers, diced (optional)
  • 1 teaspoon Garlic Powder
  • Cilantro, for garnishing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine shredded chicken, diced onion, diced bell peppers, garlic powder, and 1 cup of enchilada sauce in a large bowl.
  3. Spread a thin layer of enchilada sauce on the bottom of a 9×13-inch casserole dish.
  4. Layer half of the corn tortillas over the sauce.
  5. Spoon half of the chicken mixture over the tortillas, then sprinkle with 1 cup of shredded cheese.
  6. Repeat layering with another layer of tortillas, the remaining chicken filling, and another cup of cheese.
  7. Top with one last layer of tortillas and the remaining enchilada sauce, then sprinkle the remaining cheese on top.
  8. Cover with aluminum foil and bake for about 25 minutes, then remove the foil and bake for an additional 10-15 minutes.
  9. Cool for 5-10 minutes before serving.

Notes

Serve with fresh cilantro and a dollop of sour cream or Greek yogurt. For a gluten-free option, ensure tortillas and sauce are gluten-free.
