French Onion Soup

A classic, comforting French Onion Soup with rich flavors from caramelized onions, savory beef broth, and melted Gruyère cheese.

  • 4 large yellow onions, thinly sliced
  • 6 cups beef broth
  • 1 hearty baguette, sliced into rounds
  • 1 to 2 cups Gruyère cheese, grated
  • 4 tablespoons butter
  • 1/2 cup dry white wine or sherry
  • Salt and sugar to taste

Instructions

  1. Slice the onions thinly.
  2. Caramelize the onions in butter over medium heat for 30-45 minutes until golden brown.
  3. Deglaze the pot with wine and simmer for 2-3 minutes.
  4. Add the beef broth and bring to a simmer, cooking for 30 minutes.
  5. Preheat the oven to 350°F (175°C) and toast the baguette slices for about 10 minutes.
  6. Build your soup bowls by ladling soup, adding baguette, and sprinkling cheese.
  7. Broil for 2-3 minutes until the cheese is melted and bubbly.

Notes

For variations, try adding fresh herbs, sautéed mushrooms, or using gluten-free bread.
