Chicken Wild Rice Bowl

A comforting and nourishing bowl packed with tender chicken, earthy wild rice, sautéed mushrooms, and vibrant spinach, perfect for cozy gatherings.

  • 1 lb Chicken Breast (or Thighs)
  • 1 cup Wild Rice
  • 8 oz Mushrooms (cremini or shiitake)
  • 2 cups Fresh Spinach
  • 3 cloves Garlic (minced)
  • 1 Onion (diced)
  • 2 tbsp Olive Oil
  • 2 cups Chicken Broth or Vegetable Broth
  • Salt and Pepper to taste

Instructions

  1. Cook the Wild Rice: Rinse wild rice under cold water. In a medium pot, combine wild rice with chicken or vegetable broth. Bring to a boil, then reduce to a simmer. Cover and cook for about 45-50 minutes.
  2. Prep the Chicken: Slice chicken into bite-sized pieces. Season with salt and pepper. Marinating is optional but recommended.
  3. Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, and sauté until translucent, about 3-5 minutes.
  4. Cook the Chicken: Add seasoned chicken to the skillet and cook for about 5-7 minutes until golden brown and cooked through.
  5. Add the Mushrooms and Spinach: Stir in sliced mushrooms and cook until they soften. Add fresh spinach and cook until wilted.
  6. Combine Everything: Fluff the cooked wild rice and add it to the skillet. Stir well to combine, and adjust seasoning as needed.
  7. Serve: Plate the Chicken Wild Rice Bowl and enjoy, optionally garnished with fresh herbs or a squeeze of lemon juice.

Notes

Garnish with fresh herbs like parsley or chives, or add a dollop of Greek yogurt or sour cream for extra creaminess.
