BBQ Chicken Stuffed Sweet Potatoes

A delightful meal that combines the sweet, earthy flavors of colorful sweet potatoes with juicy, tangy BBQ chicken.

  • 4 medium sweet potatoes
  • 2 cups shredded cooked chicken
  • 1 cup BBQ sauce
  • Salt and pepper to taste
  • Chopped green onions (for garnish)
  • Sour cream or yogurt (optional, for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse each sweet potato under cold water to remove any dirt, then dry them off.
  3. Bake the sweet potatoes for about 45–60 minutes, or until they are fork-tender.
  4. Shred the cooked chicken into bite-sized pieces and toss it with BBQ sauce in a mixing bowl.
  5. Slice each sweet potato in half lengthwise and fluff the insides with a fork.
  6. Stuff the sweet potatoes with the BBQ chicken mixture.
  7. Bake again for an additional 10-15 minutes.
  8. Garnish with chopped green onions and serve with a dollop of sour cream or yogurt if desired.
