Quick & Delicious Pumpkin Sugar Cookies with Cream Cheese Frosting

  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup pumpkin puree
  • 1 egg yolk
  • 1 tsp vanilla extract

  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 4 oz cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the pumpkin puree, egg yolk, and vanilla extract.
  4. Combine the flour, baking powder, salt, cinnamon, nutmeg, and cloves in a separate bowl.
  5. Mix the dry ingredients into the wet ingredients until just combined.
  6. Chill the dough for about 30 minutes, if time allows.
  7. Scoop dough balls onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Make the frosting by beating cream cheese and butter until smooth, then adding powdered sugar, vanilla, and salt.
  11. Frost the cooled cookies generously with the cream cheese frosting.
