Cozy Up with Taco Soup

A heartwarming, savory, and spicy Taco Soup that’s perfect for cozy nights.

  • 1 lb Ground Beef
  • 2 cans Canned Beans (black beans and kidney beans)
  • 1 cup Corn
  • 1 can Canned Tomatoes (diced with green chilies)
  • 2 tbsp Taco Seasoning
  • Optional Toppings: Sour cream, shredded cheese, fresh cilantro, avocado, crushed tortilla chips

Instructions

  1. Brown the Beef: In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Once hot, add the ground beef. Use a wooden spoon to break it up into small pieces. Season with a pinch of salt and pepper.
  2. Add the Beans and Corn: Once the beef is browned, drain excess fat (if necessary) and add your drained beans and corn to the pot. Stir to combine.
  3. Incorporate the Tomatoes: Add the canned tomatoes (including juices) to the mixture. Give it a good stir to create the soup base.
  4. Season It Up: Sprinkle the taco seasoning into the pot and stir it in. Allow those spices to mingle for a couple of minutes.
  5. Simmer Together: Pour in 2 cups of water and bring to a gentle boil. Reduce heat and let it simmer uncovered for 20-25 minutes.
  6. Serve It Up: Once the soup is thick and bubbling, use a ladle to scoop it into bowls, topping with garnishes.
