Summer Basil Tomato Salad

A fresh and vibrant salad made with ripe tomatoes, aromatic basil, and a light drizzle of olive oil, capturing the essence of summer.

Ingredients

  • 4 ripe tomatoes, sliced or cubed
  • 1 hefty handful of fresh basil, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt & pepper to taste
  • Optional: Crumbles of feta or fresh mozzarella

Instructions

  1. Gather your ingredients: fresh tomatoes, basil, olive oil, balsamic vinegar, salt, and pepper.
  2. Prepare the tomatoes: wash, dry, and slice them as desired.
  3. Chop the basil: rinse, dry, and chop or tear into pieces.
  4. Combine the tomatoes and basil in a large mixing bowl.
  5. Dress the salad with olive oil, balsamic vinegar, salt, and pepper.
  6. Taste and adjust the seasoning if necessary.
  7. Let it rest for about 10 minutes to allow the flavors to meld.
  8. Serve immediately or refrigerate for a short period.

Notes

This salad is best enjoyed fresh but can be prepared a few hours in advance. Keep dressing separate until just before serving.
