Arugula Nectarine Salad with Fresh Basil Dressing

  • 2 nectarines, sliced
  • 1/4 cup fresh basil leaves
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare the Dressing: In a small bowl, combine the fresh basil leaves, olive oil, balsamic vinegar, salt, and pepper. Use a whisk to blend it until smooth.
  2. Wash the Arugula: Rinse the arugula under cold water to remove any dirt. Spin it in a salad spinner or gently pat it dry with a paper towel.
  3. Slice the Nectarines: Cut the nectarines into thin slices, removing the pit.
  4. Assemble the Salad: In a large serving bowl, add the fresh arugula. Layer the sliced nectarines on top.
  5. Dress and Toss: Drizzle the fresh basil dressing over the salad and gently toss everything together until evenly coated.
  6. Serve Immediately: It’s best enjoyed fresh, but store any leftovers in an airtight container in the fridge.
