Stuffed Pepper Soup

A comforting and flavorful stuffed pepper soup made with ground beef, bell peppers, rice, and tomatoes; perfect for cozy nights.

  • 1 lb Ground Beef
  • 3 Bell Peppers (red, yellow, green)
  • 1 cup Rice (white or brown)
  • 1 can Canned Tomatoes (diced)
  • 1 Onion (diced)
  • 2 cloves Garlic (minced)
  • 4 cups Beef or Vegetable Broth
  • Salt and Pepper (to taste)
  • Italian Herbs (basil, oregano, thyme)

Instructions

  1. Sauté the onions in olive oil over medium heat for 3-4 minutes until translucent, then add garlic and sauté for another minute.
  2. Brown the ground beef, seasoning with salt and pepper, and cook for 5-7 minutes until browned.
  3. Add the diced bell peppers and stir for another 3-4 minutes until they start to soften.
  4. Incorporate the diced tomatoes and drained rice, mixing everything evenly.
  5. Pour in the broth and stir, bringing the mixture to a simmer.
  6. Season with Italian herbs and let the soup simmer for 15-20 minutes on low heat.
  7. Taste and adjust seasoning as needed before serving.
  8. Serve the soup in bowls, garnished with fresh herbs or shredded cheese.

Notes

For a vegetarian version, substitute ground beef with lentils or mushrooms and use vegetable broth.
