Steak Grain Bowl

A warm, hearty grain bowl filled with perfectly cooked steak, nutty farro, and a colorful medley of roasted vegetables.

Ingredients

  • Flank steak (or sirloin, ribeye, chicken, or tofu)
  • 1 cup farro (or quinoa or brown rice for a gluten-free option)
  • 34 cups assorted roasted vegetables (bell peppers, zucchini, carrots)
  • 2 tablespoons extra-virgin olive oil (or avocado oil)
  • Salt and pepper to taste
  • Garlic powder to taste
  • Smoked paprika to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rinse 1 cup of farro under cold water. Add it to a pot with 3 cups of water, bring to a boil, then reduce to simmer and cook for about 25-30 minutes.
  3. Chop the vegetables and toss them with olive oil, salt, pepper, and garlic powder.
  4. Spread the veggies on a baking sheet and roast for 20-25 minutes, flipping halfway through.
  5. Heat a grill pan over medium-high heat and season the steak. Cook for about 4-5 minutes per side for medium-rare.
  6. Slice the steak against the grain. In a bowl, layer the farro, roasted veggies, and steak.
  7. Drizzle with olive oil or your favorite dressing and sprinkle with fresh herbs.
