Spicy Mango Shrimp Tacos

A fiesta of flavor with juicy shrimp seasoned with a spicy kick, nestled in soft corn tortillas and topped with refreshing mango salsa.

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • 8 small corn tortillas
  • Optional toppings: avocado slices, lime wedges, additional cilantro

Instructions

  1. Prepare the shrimp: Clean and season the shrimp by mixing olive oil, chili powder, paprika, cumin, salt, and black pepper. Marinate for 10 minutes.
  2. Make the mango salsa: Dice mango, chop red onion, jalapeño, and cilantro. Mix in a bowl, add lime juice, and stir.
  3. Cook the shrimp: Heat a skillet over medium-high heat, add shrimp, and cook for 2-3 minutes on each side until pink.
  4. Warm your tortillas: Heat tortillas in the same skillet or microwave until warm and pliable.
  5. Assemble your tacos: Place shrimp in the warm tortillas, top with mango salsa, and add optional toppings.

Notes

For added flavor, squeeze lime juice over assembled tacos.
