Bright and zesty marinated tomatoes that burst with flavor, perfect for any meal.

  • 1.5 pounds Ripe Tomatoes
  • 6 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Red Grape Vinegar
  • ⅓ cup Red Onion (finely chopped)
  • 1 clove Garlic (minced)
  • 2 teaspoons Basil (chopped)
  • 2 teaspoons Parsley (finely chopped)
  • 1 teaspoon Dill (finely chopped)
  • Salt and Freshly Ground Pepper (to taste)

Instructions

  1. Prep the Tomatoes: Start by washing your tomatoes under cold water. Then, chop them into bite-sized pieces.
  2. Create the Marinade: In a large mixing bowl, combine the extra virgin olive oil, red grape vinegar, minced garlic, chopped red onion, basil, parsley, dill, salt, and freshly ground pepper. Whisk together until blended.
  3. Marinate the Tomatoes: Add the chopped tomatoes to the dressing and gently toss to coat. Cover and let sit for at least 30 minutes.
  4. Serve Up the Yum: Transfer marinated tomatoes to a serving bowl or platter and drizzle with any extra marinade.

Notes

Best served with crusty bread or as a topping for grilled meats. Can store in the fridge for 3-5 days.
