Slow Cooker Sausage and Potato Casserole

A comforting and delicious slow cooker casserole featuring sausage, potatoes, and creamy cheese.

Ingredients

  • 32 oz. bag of hash browns or fresh diced potatoes
  • 14 oz. kielbasa, cut into small pieces
  • 1 small onion, diced
  • 2 1/2 cups shredded cheddar cheese
  • 10.5 oz can of cream of chicken or mushroom soup
  • 1/2 cup sour cream
  • Salt and pepper to taste

Instructions

  1. Prep the Slow Cooker by plugging it in and setting it to low heat.
  2. Layer the frozen hash browns in the bottom of the slow cooker. Sprinkle diced onion over them.
  3. Add the sliced kielbasa on top of the onion layer.
  4. Mix the cream of chicken or mushroom soup with the sour cream in a separate bowl until smooth.
  5. Combine 2 cups of shredded cheddar cheese into your creamy mixture.
  6. Layer the creamy cheese mixture over the potato and sausage layers evenly.
  7. Top with the remaining cheddar cheese.
  8. Season the top layer with salt and pepper.
  9. Cover and let cook on low for 6-8 hours or high for 3-4 hours until bubbly.

Notes

You can prepare this casserole the night before and refrigerate it. For variation, try turkey sausage or incorporate more veggies.
