  • 1 tbsp butter (or olive oil for dairy-free)
  • 2 tbsp honey (or maple syrup for vegan)
  • Flakey sea salt, to taste
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 2 tsp Dijon mustard
  • 1 tsp honey (or agave nectar for vegan)
  • Salt + pepper, to taste
  • 5 cups mixed greens
  • 2 baby cucumbers, sliced
  • 1 1/2 cups ripe strawberries, sliced
  • 1 avocado, diced
  • 1/3 of a red onion, thinly sliced
  • 34 oz feta, crumbled

Instructions

  1. Toast the walnuts: In a medium-sized skillet over medium heat, melt the butter. Add the walnut pieces and stir occasionally for about 5 minutes, until fragrant and slightly golden.
  2. Sweeten them up: Drizzle in the honey and sprinkle a generous pinch of flakey sea salt over the walnuts, stirring well to coat. Cook for another minute, then transfer to a plate to cool.
  3. Prep the dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, and honey. Season with salt and pepper to taste.
  4. Assemble the salad: In a large bowl, toss the mixed greens, sliced cucumbers, strawberries, diced avocado, and red onion, being gentle to avoid mashing.
  5. Pour on the dressing: Drizzle the dressing over the salad and toss to combine.
  6. Top it off: Sprinkle the salted honey walnuts and crumbled feta on top and serve immediately.
