Roasted Beet Goat Cheese Salad

A vibrant roasted beet salad featuring creamy goat cheese, peppery arugula, and toasted walnuts, perfect for gatherings and special occasions.

Ingredients

  • 4 medium beets
  • 4 oz goat cheese
  • 4 cups arugula
  • 1/2 cup walnuts
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey (or maple syrup)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Rinse and trim the beets, then wrap in aluminum foil and roast for 45-60 minutes.
  2. Cool and peel the beets once roasted, discarding the skins and slicing the beets.
  3. Toast the walnuts in a pan over medium heat for 5-7 minutes until golden.
  4. Whisk together olive oil, balsamic vinegar, honey, salt, and pepper in a small bowl.
  5. Toss the arugula with some dressing, layer with beets, goat cheese, and walnuts, and drizzle with additional dressing if desired.

Notes

This salad can be made in advance; just keep the dressing separate until serving to maintain freshness.
