Quiche Stuffed Bagels

Delicious bagels stuffed with fluffy quiche filling, perfect for breakfast or brunch.

  • 4 bagels (plain, whole wheat, or everything)
  • 2 large eggs
  • 6 tablespoons heavy cream
  • 1/4 cup shredded cheddar cheese
  • 4 slices cooked bacon (chopped)
  • 1/4 cup sautéed spinach or bell peppers
  • Salt and pepper (to taste)
  • Optional: chives for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and slice your bagels in half, creating a pocket for the filling.
  2. Mix the eggs and heavy cream in a bowl, whisking until well combined. Add bacon, spinach, cheese, salt, and pepper.
  3. Stuff the bagel halves with the quiche mixture, packing it in nicely.
  4. Bake for 20-25 minutes until the filling is set and the tops are golden.
  5. Garnish with fresh chives before serving warm.
