Cozy Pumpkin Mac and Cheese

A creamy and comforting twist on classic mac and cheese, enhanced with pumpkin puree for a rich fall flavor.

  • 1 cup pumpkin puree
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 2 cups whole milk
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste
  • Nutmeg, a pinch

Instructions

  1. Prep the pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. Make the cheese sauce: In a large saucepan over medium heat, melt the butter. Add the flour, whisking continuously for about 2 minutes to create a roux.
  3. Add milk gradually: Slowly pour in the milk while whisking to avoid lumps. Stir until the mixture is bubbling and thickened, about 4-5 minutes.
  4. Incorporate the pumpkin: Stir in the pumpkin puree until well combined.
  5. Add the cheeses: Gradually add the sharp cheddar and mozzarella, stirring until melted and creamy.
  6. Season it up: Add salt, pepper, garlic powder, and nutmeg to taste.
  7. Mix it all together: Fold the cooked pasta into the cheese sauce until every bite is coated.
  8. Bake the dish: Preheat oven to 350°F (175°C). Transfer mac and cheese mixture to a buttered baking dish and bake for about 25-30 minutes until bubbly and golden.
  9. Let it rest: Remove from the oven and let cool for 5-10 minutes before serving.

Notes

For added flavor, use garlic-infused butter and serve with fresh herbs on top. Leftovers can be reheated with a splash of milk for creaminess.
