Cozy Pumpkin Chili

A heartwarming pumpkin chili that combines ground beef, beans, and pumpkin for a comforting dish perfect for chilly evenings.

  • 1 cup fresh pumpkin, diced
  • 1 cup pumpkin puree
  • 1 pound lean ground beef
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 cups beef or vegetable broth

Instructions

  1. Sauté the aromatics: In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the chopped onion, minced garlic, and chopped bell pepper. Sauté for about 5 minutes, until the onion becomes translucent.
  2. Brown the beef: Add the lean ground beef to the pot. Break it up and cook until browned, about 6-8 minutes. Season with salt, pepper, and half the chili powder.
  3. Add the pumpkin: Stir in the diced fresh pumpkin and pumpkin puree, mixing well.
  4. Introduce the beans: Add the kidney beans and black beans, stirring everything together.
  5. Season and simmer: Sprinkle in the remaining chili powder and cumin, then pour in the broth. Bring to a simmer, cover, and let simmer for about 30 minutes.
  6. Adjust the flavors: After 30 minutes, taste the chili and add more salt, pepper, or spices as desired.

Notes

For a vegetarian version, swap ground beef with lentils or chickpeas. Add chipotle powder for a smoky kick!
