  • ½ cup plain Greek yogurt
  • ½ cup honey or maple syrup
  • ½ cup vanilla protein powder
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • Optional: ½ cup crushed freeze-dried raspberries

Instructions

  1. Prep Your Pan: Start by greasing a 9×9-inch (or 8×8-inch) baking pan with a bit of coconut oil or line it with parchment paper.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the old-fashioned oats, vanilla protein powder, chia seeds, and salt.
  3. Blend Wet Ingredients: In another bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.
  4. Combine Everything: Gradually pour the wet mixture into the dry ingredients while stirring continuously.
  5. Add Any Extras: If incorporating freeze-dried raspberries or other add-ins, fold them into the mixture now.
  6. Transfer to the Pan: Pour the mixture into the prepared baking pan and press it down firmly.
  7. Chill and Set: Pop the pan into the refrigerator for at least 2 hours to set firm.
  8. Cut and Serve: Once set, cut the bars into squares or rectangles.
  9. Store: Keep in an airtight container in the fridge for up to a week.

Notes

These bars can be customized with various add-ins like nuts, chocolate, or fruit. If they fall apart, add more adhesive ingredients next time.
