Bourbon Fig Preserves

  • 11 pounds fresh figs
  • 12 cups water
  • 8 cups sugar
  • 1 tablespoon bottled lemon juice
  • Bourbon (to taste)

Instructions

  1. Wash the figs under cool water. Remove stems and halve them.
  2. Choose a large pot and place over medium heat, adding the water.
  3. Add the halved figs into the pot, stirring gently.
  4. Gradually add in the sugar, stirring continuously to dissolve.
  5. Pour in the lemon juice and bourbon, stirring gently.
  6. Allow the mixture to come to a gentle boil, then reduce to simmer for 30-45 minutes.
  7. Check for consistency by placing a spoonful on a chilled plate.
  8. Prepare your canning jars by washing and sterilizing them.
  9. Fill the jars with the fig mixture, leaving 1/4 inch of headspace.
  10. Seal the jars and process in a water bath for 10-15 minutes.
  11. Cool the jars upside down on a kitchen towel.

Notes
