Pizza Soup

A warm, comforting bowl of soup capturing all the deliciousness of your favorite pizza in a cozy, slurp-able form.

Ingredients

  • 1 lb Italian sausage
  • 1 cup sliced pepperoni
  • 2 cans fire-roasted diced tomatoes (28 ounces total)
  • 4 cups chicken or vegetable broth
  • 1 cup shredded mozzarella cheese
  • 1 onion, finely chopped
  • 34 cloves garlic, minced
  • 12 teaspoons Italian seasoning
  • Red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Brown the sausage in a large pot with a drizzle of olive oil over medium-high heat for about 5-7 minutes.
  2. Sauté the onion and garlic until the onion is translucent, about 3-4 minutes.
  3. Add the fire-roasted diced tomatoes and broth, stirring to combine.
  4. Season with Italian seasoning, red pepper flakes, salt, and pepper to taste.
  5. Let the mixture come to a boil, then reduce heat and simmer for 15-20 minutes.
  6. Add the shredded mozzarella cheese and stir until melted.
  7. Finish with pepperoni or your choice of toppings just before serving.

Notes

For a veggie option, swap the sausage for sautéed mushrooms, zucchini, and bell peppers. Store leftovers in the fridge for 3-4 days or freeze for later use.
