  • 1-inch piece of fresh ginger (peeled and grated)
  • 2 tablespoons honey or agave syrup
  • 1/2 cup water
  • Ice
  • 2 cups ginger beer
  • Fresh mint leaves for garnish
  • Pineapple wedges for garnish

Instructions

  1. Prepare the Ginger Syrup: In a small saucepan over medium heat, combine the grated ginger, honey (or agave), and water. Stir to combine and bring to a gentle simmer.
  2. Strain the Syrup: Remove the saucepan from heat and allow the mixture to cool. Strain the ginger syrup into a bowl or jar, pressing down on the ginger to extract liquid.
  3. Assemble Your Mocktail: In a large glass or cocktail shaker, add the fresh pineapple chunks and muddle them gently.
  4. Mix It Together: Add the strained ginger syrup into the glass with the muddled pineapple and stir to combine.
  5. Add Ice and Ginger Beer: Fill the glass with ice and slowly pour the ginger beer over the top.
  6. Garnish and Serve: Top with fresh mint leaves and a pineapple wedge.
