Peach Crumble Bars with a Thick Shortbread Crust and Honey Glaze

Sweet and buttery peach crumble bars with a thick shortbread crust topped with a honey glaze, perfect for summer gatherings.

  • 1 cup Unsalted Butter (226g, softened)
  • 1 cup Granulated Sugar (200g)
  • 3 cups All-Purpose Flour (375g)
  • 1 cup Old Fashioned Rolled Oats (90g)
  • 56 large Fresh Peaches (900g, peeled and chopped)
  • 2 tbsp Cornstarch (15g)
  • 4 tbsp Pure Honey (60ml, for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking pan lined with parchment paper and lightly butter.
  3. Make the shortbread crust by creaming the butter and sugar together until light and fluffy.
  4. Add the flour and oats, mixing until a crumbly dough forms.
  5. Bake the crust for 15-20 minutes until lightly golden.
  6. Prepare the peach filling by tossing chopped peaches with cornstarch and sugar.
  7. Assemble by spreading the peach mixture over the cooled crust and topping with reserved crumble.
  8. Bake again for 30-35 minutes until golden and bubbling.
  9. Drizzle honey over the bars once out of the oven.
  10. Cool completely before cutting into bars.

Notes

Serve with vanilla ice cream or whipped cream for an indulgent treat. You can add nuts or change fruits for variations!
