Peach Caprese Salad with Burrata

A vibrant and refreshing salad featuring sweet peaches, creamy burrata, and fresh herbs, perfect for summer dining.

Ingredients

  • 3 big ripe peaches
  • 1 ball burrata, removed from liquid
  • 1 Lebanese cucumber
  • ¾ cup fresh basil leaves, picked
  • ¼ cup fresh thyme leaves, picked
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 tsp malt vinegar
  • 3 tbsp olive oil
  • ½ tbsp honey
  • ¼ tsp flaky salt
  • ¼ tsp freshly ground black pepper

Instructions

  1. Prep the peaches by washing them thoroughly and slicing them into wedges.
  2. Slice the Lebanese cucumber thinly or into half-moons.
  3. Mix the dressing in a small bowl with lemon zest, lemon juice, malt vinegar, olive oil, honey, flaky salt, and black pepper.
  4. Assemble the salad by tossing the peaches, cucumber, basil, and thyme together.
  5. Add torn pieces of burrata on top of the salad.
  6. Drizzle the dressing over the salad.
  7. Serve immediately for best freshness!

Notes

Garnish with additional basil leaves and serve with crusty bread for a complete experience.
