Creamy Broccoli Cheddar Soup

A heartwarming bowl of Broccoli Cheddar Soup, bursting with flavor and perfect for cozy nights.

Ingredients

  • Broccoli (about 4 cups chopped)
  • Carrots (2 medium-sized)
  • Cheddar Cheese (2 cups, shredded)
  • Heavy Cream (1 cup)
  • Vegetable or Chicken Broth (4 cups)
  • Butter (2 tablespoons)
  • Garlic (2 cloves, minced)
  • Onion (1 medium, diced)
  • Salt and Pepper (to taste)

Instructions

  1. Prep your ingredients: Start by washing and chopping your broccoli into bite-sized florets and dicing your carrots and onion. Mince the garlic as well.
  2. Sauté the aromatics: In a large pot, melt the butter over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent, then add minced garlic and cook for an additional minute.
  3. Cook the vegetables: Toss in your chopped carrots and broccoli, stirring for about 5 minutes until they soften slightly.
  4. Add your broth: Pour in the vegetable or chicken broth and bring it to a boil. Reduce heat to low and let it simmer for about 15 minutes until tender.
  5. Incorporate the cream and cheese: After blending half for creaminess, stir in heavy cream and cheddar until melted.
  6. Season to taste: Add salt and pepper according to your preference.
  7. Serve hot: Ladle into warm bowls, garnish, and enjoy!
