Tuscan White Bean Soup

A hearty and comforting Tuscan White Bean Soup that’s packed with flavors and perfect for family gatherings.

  • 2 cans (15 oz each) white beans (Cannellini or Great Northern)
  • 4 cups fresh spinach (or kale)
  • 12 cups tomatoes (canned or fresh)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Fresh herbs (thyme and rosemary), to taste
  • Salt and pepper, to taste
  • Red pepper flakes (optional)

Instructions

  1. Prep your veggies: Start by dicing one medium onion and mincing three cloves of garlic.
  2. Sauté the aromatics: In a large pot, drizzle about two tablespoons of olive oil over medium heat. Add the onions and sauté until translucent—about 5 minutes. Add minced garlic and cook for another minute.
  3. Add the tomatoes: Chop fresh tomatoes or add a can of diced tomatoes to the pot and stir to combine.
  4. In with the beans: Drain and rinse two cans of white beans before adding them to the mixture. Stir well.
  5. Pour in the vegetable broth: Bring to a gentle boil, then reduce heat and simmer for 20 minutes.
  6. Add the green goodness: Toss in four cups of fresh spinach and stir until wilted. Season to taste with salt and pepper.
  7. Serve and sip: Ladle into bowls, drizzle with olive oil, and enjoy with crusty bread.

Notes
