Turkey Vegetable Soup

A warm, hearty turkey vegetable soup filled with nourishing goodness, perfect for chilly evenings or family gatherings.

  • 1 lb Ground Turkey
  • 4 cups Mixed Vegetables (carrots, peas, green beans)
  • 6 cups Broth (chicken or vegetable)
  • 1 tsp Fresh Thyme
  • 1 tsp Fresh Parsley
  • 2 Bay Leaves
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 2 tbsp Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Prep your ingredients: Chop the vegetables and get everything ready.
  2. Sauté the aromatics: Heat olive oil in a pot and sauté the onion until translucent, then add garlic.
  3. Brown the turkey: Add ground turkey to the pot and cook until browned.
  4. Add the veggies: Stir in mixed vegetables and let cook for 5 minutes.
  5. Pour in the broth: Add broth and herbs, bring to a boil, then simmer for 20-30 minutes.
  6. Taste and adjust seasoning: Season to your preference.
  7. Serve it up: Ladle soup into bowls and garnish if desired.

Serve with warm crusty bread or a side salad. This soup is forgiving and can be customized with leftover veggies or spices.
