Turkey Meatball Soup

A warm and hearty turkey meatball soup that brings together family around the dinner table, perfect for cozy moments.

Ingredients

  • 1 pound lean ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 stalks celery, diced
  • 6 cups chicken or vegetable broth
  • 1 bay leaf
  • Optional: minced garlic
  • Optional: grated Parmesan cheese

Instructions

  1. In a large bowl, mix ground turkey, breadcrumbs, parsley, egg, salt, and pepper until well combined.
  2. Shape into bite-sized meatballs and set aside.
  3. Heat olive oil in a large pot over medium heat.
  4. Brown the meatballs on all sides for 5-7 minutes.
  5. Remove the meatballs and set aside.
  6. Add diced onion, chopped carrots, and diced celery to the same pot and sauté until softened, about 5 minutes.
  7. Pour in the broth and add a bay leaf, stirring well.
  8. Return the meatballs to the pot and simmer for 15-20 minutes.
  9. Taste and adjust seasoning with salt and pepper, adding garlic if desired.
  10. Serve in bowls, garnished with Parmesan if using.

This soup is flexible; feel free to substitute ingredients based on your preference or what you have available.
