Creamy Tortellini Soup

A comforting and creamy soup featuring cheese tortellini, Italian sausage, and fresh spinach—perfect for chilly evenings.

  • 2 cups Cheese Tortellini
  • 1 pound Italian Sausage
  • 4 cups Fresh Spinach
  • 2 cups Heavy Cream
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups Chicken Broth
  • Salt and Pepper to taste
  • Fresh Basil (optional for garnish)

Instructions

  1. Sauté the aromatics: In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté for about 2-3 minutes until it’s translucent. Add the minced garlic and sauté for an additional minute.
  2. Add the sausage: Break the Italian sausage up with a wooden spoon and cook until it’s browned and cooked through, about 5-7 minutes.
  3. Pour in the broth and cream: Add the chicken broth and bring to a simmer. Stir in the heavy cream.
  4. Add the spinach and tortellini: Stir in cheese tortellini and fresh spinach. Simmer for about 3-5 minutes.
  5. Season to taste: Taste the soup and season with salt and pepper as needed.
  6. Serve with a smile: Ladle into bowls, add fresh basil on top, and serve with crusty bread.

Notes

For a lighter version, substitute heavy cream with half-and-half or whole milk. This soup stores well in the fridge for up to 3 days.
