Creamy Mushroom Soup

A velvety and rich creamy mushroom soup that warms the soul, perfect for any cozy gathering.

Ingredients

  • 2 cups mushrooms (cremini, shiitake, or button)
  • 1 onion (yellow or white)
  • 1 cup heavy cream
  • 1 teaspoon fresh thyme (or less if using dried)
  • 4 cups vegetable or chicken broth
  • 2 tablespoons butter (or olive oil)
  • 1 clove garlic (optional)

Instructions

  1. Prep your ingredients by cleaning and chopping the mushrooms and onion, and mincing the garlic if using.
  2. Sauté the onions in melted butter over medium heat until translucent, about 5 minutes.
  3. Add the sliced mushrooms and cook down for about 10 minutes until they shrink and release their juices.
  4. Incorporate minced garlic and thyme in the last minute of cooking.
  5. Pour in the broth, stir, and bring to a gentle simmer for about 15 minutes.
  6. Blend the soup until smooth using an immersion blender or a traditional blender in batches.
  7. Add the heavy cream, stirring until fully incorporated.
  8. Season to taste with salt and pepper.
  9. Garnish with additional cream or herbs before serving.

Notes

For a dairy-free option, substitute heavy cream with coconut milk. This soup can also be frozen for up to three months.
