Creamy Corn Chowder

A warm bowl of creamy corn chowder, perfect for cozy nights, featuring fresh corn, potatoes, and crispy bacon.

Ingredients

  • 4 cups Fresh Corn (or frozen corn)
  • 2 medium Potatoes (peeled and diced)
  • 4 slices Bacon (or turkey bacon)
  • 1 cup Heavy Cream (or half-and-half)
  • 1 Onion (diced)
  • 3 cloves Garlic (minced)
  • 4 cups Vegetable or Chicken Broth
  • Salt & Pepper to taste
  • Chives or Parsley (for garnish)

Instructions

  1. Cook the bacon in a large pot or Dutch oven over medium heat for 5-7 minutes until crisp. Remove and let rest on paper towel.
  2. Sauté the diced onion in the bacon fat for 3-4 minutes. Add minced garlic and sauté for an additional minute.
  3. Add the diced potatoes and season lightly with salt and pepper. Pour in the broth and simmer for about 15-20 minutes.
  4. Incorporate the corn into the pot and simmer for another 5-7 minutes.
  5. Pour in the heavy cream and let the chowder cook for an additional 5 minutes to thicken.
  6. Blend if a creamier texture is desired, otherwise, skip this step.
  7. Serve warm with crumbled bacon and garnish with chives or parsley.

Notes

For a spicy version, add diced jalapeños or cayenne pepper. This chowder can be made ahead of time and tastes even better the next day.
