Chicken Wild Rice Soup

A warm and comforting soup perfect for chilly days, featuring chicken, wild rice, and a blend of sautéed vegetables.

  • 1 lb boneless, skinless chicken breasts (or thighs)
  • 1 cup wild rice (or a mix of brown rice and quinoa)
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 1 cup cream (or half-and-half/coconut milk)
  • 6 cups chicken broth (low-sodium preferred)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme (or fresh)
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by chopping the vegetables and cutting the chicken into bite-sized pieces.
  2. Sauté the onions and garlic in olive oil until fragrant (about 2-3 minutes).
  3. Add the carrots and celery, cooking for another 5 minutes until softened.
  4. Include the chicken and brown it slightly (about 5 minutes).
  5. Stir in the wild rice.
  6. Pour in the chicken broth and bring to a boil.
  7. Add the herbs and seasoning, then simmer for about 45 minutes.
  8. Finish with cream, adjust seasoning, and remove bay leaf.
  9. Serve into bowls, garnishing with fresh herbs or croutons.
