Chicken & Wild Rice Soup

A heartwarming Chicken & Wild Rice Soup filled with tender chicken, wild rice, and cozy flavors.

  • 1 tablespoon olive oil
  • 1 cup diced onions
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 pound boneless, skinless chicken breasts or thighs
  • 6 cups chicken broth
  • 1 cup wild rice, rinsed
  • 1 cup cream
  • Salt and pepper to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Season with salt and pepper. Sauté for 5-7 minutes until onions turn translucent.
  2. Add the chicken: Toss in chicken pieces, stirring to coat them in the aromatics. Cook until no longer pink if raw, about 5-6 minutes.
  3. Pour in the broth: Add chicken broth to the pot. Stir to combine everything.
  4. Incorporate the wild rice: Add rinsed wild rice to the pot, simmer on low heat for about 45 minutes until tender.
  5. Finish the soup: Lower the heat and slowly pour in the cream. Stir gently, season to taste.
  6. Serve with love: Garnish with parsley or thyme before serving.
