  • 1 head Cauliflower, cut into small florets
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 cup Cream (or coconut milk for dairy-free)
  • 4 cups Vegetable or Chicken Stock
  • Olive Oil, for sautéing
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prep your ingredients: Begin by washing and cutting your cauliflower into small florets. Chop your onion and mince the garlic.
  2. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add garlic: Toss in minced garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Incorporate cauliflower: Add cauliflower florets and stir together for about 5 minutes.
  5. Pour in stock: Add enough stock to cover the cauliflower and bring to a gentle simmer. Cook until at tender, about 15-20 minutes.
  6. Blend until creamy: Use an immersion blender to blend the soup until smooth.
  7. Add cream: Return soup to stovetop and stir in cream. Adjust consistency with more stock if needed.
  8. Season and serve: Taste and season with salt and pepper as desired. Serve warm.

Notes

For added flavor, consider stirring in fresh herbs or cheese just before serving.
