Cheeseburger Soup

A warm and hearty soup that captures all the delicious flavors of a classic cheeseburger, finished with creamy cheddar cheese.

Ingredients

  • 1 lb ground beef
  • 2 medium Yukon Gold or Russet potatoes, diced
  • 2 carrots, chopped
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • Salt, to taste
  • Black pepper, to taste
  • Optional: smoked paprika or chili powder

Instructions

  1. Brown the beef in a large pot over medium heat, seasoning with salt and pepper. Drain fat.
  2. Sauté chopped onions and carrots in the same pot until softened, then add minced garlic for an additional minute.
  3. Add in your diced potatoes and cooked beef, stirring to combine.
  4. Pour in beef broth and bring to a boil, then reduce to a simmer and cover for 20-25 minutes until potatoes are fork-tender.
  5. Mix in milk and shredded cheddar, stirring until melted and combined.
  6. Taste and adjust seasoning as needed.
  7. Serve in bowls topped with extra cheese and optional burger toppings.

Notes

For a vegetarian version, replace ground beef with lentils or mushrooms. To adjust creaminess, add more milk as desired.
