Cabbage Roll Soup

A cozy and flavorful Cabbage Roll Soup that captures the essence of traditional cabbage rolls with half the effort.

  • 1 lb lean ground beef (80/20)
  • 1 medium green cabbage, chopped
  • 1 cup long-grain white rice (or quinoa for gluten-free)
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth (or vegetable broth for meatless version)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Optional: dollop of sour cream and fresh herbs for serving

Instructions

  1. Brown the beef in a large pot over medium heat, breaking it up as it cooks, for about 5-7 minutes.
  2. Add the diced onion and minced garlic, sauté for another 2-3 minutes until translucent.
  3. Add the chopped cabbage and sauté for 3-4 minutes until it starts to soften.
  4. Pour in the diced tomatoes and beef broth, stirring to combine.
  5. Season with salt, pepper, paprika, oregano, and thyme. Let it simmer for 20 minutes.
  6. Add the rice, stir well, and bring back to a gentle boil. Cover and reduce heat, cooking for another 15-20 minutes.
  7. Taste and adjust seasonings before serving.

Notes

This soup can be made ahead of time and tastes even better the next day. Freezes well for up to three months.
