Hearty Beef Vegetable Soup

A comforting and flavorful Beef Vegetable Soup, perfect for chilly evenings.

  • 1 pound beef (chuck roast preferred)
  • 2 large potatoes, diced
  • 2 medium carrots, sliced
  • 1 cup peas (frozen or fresh)
  • 1 can diced tomatoes or 2 fresh tomatoes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Sear the beef: Heat olive oil in a large pot, season beef with salt and pepper, and sear it on all sides (about 5-7 minutes).
  2. Cook the aromatics: Remove beef, add onions and garlic to the pot, and sauté until onions are translucent (about 3-4 minutes).
  3. Deglaze with broth: Pour in beef broth while scraping the bottom of the pot.
  4. Add the beef back: Return the beef to the pot with its juices and add potatoes, carrots, thyme, and bay leaf.
  5. Simmer away: Bring to a boil, reduce heat to low, cover, and let simmer for about 60-90 minutes.
  6. Finish with peas and tomatoes: Stir in the diced tomatoes and peas, cooking for an additional 10 minutes.
  7. Taste and adjust: Add more salt, pepper, or red pepper flakes if desired.
  8. Serve with love: Ladle into bowls and garnish with fresh parsley if desired.

Notes

This soup can be frozen for up to three months. Feel free to use leftover vegetables.
