Beef Bourguignon

A comforting French stew made with tender beef, earthy mushrooms, and rich red wine, perfect for family gatherings.

  • 23 pounds Beef (Chuck or Brisket)
  • 8 ounces Mushrooms (Cremini or Button)
  • 2 Carrots, chopped
  • 2 cups Red Wine
  • 2 Onions, diced
  • 4 cloves Garlic, minced
  • 23 cups Beef Broth
  • 23 Bay Leaves
  • 1 tablespoon Olive Oil or Butter
  • 12 teaspoons Thyme (Fresh or Dried)

Instructions

  1. Prep the meat by cutting it into 1.5-inch chunks and patting it dry with paper towels.
  2. Heat a tablespoon of olive oil or butter in a large Dutch oven over medium-high heat and sear the beef for about 3-4 minutes on each side.
  3. Add diced onions to the pot and sauté for 3-4 minutes until translucent.
  4. Mix in minced garlic and chopped carrots, cooking for another 2-3 minutes.
  5. Add chopped mushrooms and cook until golden brown, about 5-7 minutes.
  6. Pour in red wine, scraping the bottom of the pot to deglaze, and let it simmer for 5 minutes.
  7. Combine the beef back into the pot, add beef broth to cover, and toss in bay leaves and thyme.
  8. Simmer on low heat for 120-180 minutes, or oven at 325°F (160°C) for the same time.
  9. Remove bay leaves and thyme, adjust seasoning with salt and pepper, and thicken sauce if desired.

Notes

Serve with creamy mashed potatoes, crusty baguette, or buttered egg noodles for a complete meal.
