Homemade Beef Barley Soup

  • 1 lb Beef Chuck, cut into 1-inch cubes
  • 1 cup Pearl Barley
  • 2 Carrots, diced
  • 2 Celery stalks, diced
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 6 cups Beef Broth
  • 2 Bay Leaves
  • 1 tsp Thyme
  • 1 tsp Parsley
  • Salt and Pepper, to taste

Instructions

  1. Prep the ingredients: Gather your ingredients and chop the vegetables.
  2. Sear the beef: In a large pot, heat oil over medium-high heat and sear the beef until browned.
  3. Sauté the vegetables: Remove the beef and sauté onions, garlic, carrots, and celery until softened.
  4. Deglaze the pot: Add a splash of beef broth to deglaze the pot and scrape the bottom.
  5. Add the beef back: Return the beef to the pot along with remaining broth, bay leaves, thyme, salt, and pepper.
  6. Stir in the barley: Add pearl barley and let it cook for about 30-40 minutes.
  7. Taste and adjust: Adjust salt and pepper as needed before serving.
  8. Finish and serve: Remove bay leaves and sprinkle with fresh parsley before serving hot.

Notes

For a vegetarian version, substitute beef with mushrooms and use vegetable broth.
