Baked Zucchini and Cheese Bliss

A delightful dish featuring golden brown, cheesy, and crispy baked zucchini that’s perfect as a side or light main course.

  • 3 large zucchinis, sliced into 1/4-inch rounds
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the zucchinis thoroughly and slice them into 1/4-inch rounds.
  3. In a mixing bowl, combine the breadcrumbs, mozzarella cheese, Parmesan cheese, garlic powder, dried oregano, salt, and black pepper.
  4. Add the olive oil to the breadcrumb mixture and stir until well combined.
  5. Lay out your zucchini rounds in a single layer on a baking sheet lined with parchment paper.
  6. Generously sprinkle your breadcrumb mixture over the zucchini.
  7. Bake for about 25–30 minutes, or until the zucchini is tender and the tops are golden brown and crispy.
  8. Remove from the oven and sprinkle with fresh parsley.

Notes

This recipe can be varied with additional ingredients like sun-dried tomatoes or different herbs.
