Turkey Sweet Potato Hash

A comforting and colorful dish made with roasted sweet potatoes, ground turkey, and vibrant peppers, perfect for brunch or a quick weeknight dinner.

  • 2 medium sweet potatoes, peeled and diced
  • 1 cup bell peppers, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prep your ingredients: Start by peeling and dicing the sweet potatoes into small cubes (about 1/2 inch). Chop the bell peppers and onion, and mince the garlic.
  2. Cook the sweet potatoes: Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Toss in the diced sweet potatoes, season with salt, and cook for about 10-15 minutes, stirring occasionally.
  3. Add onions and peppers: Once the sweet potatoes are tender, add the chopped onions and bell peppers to the skillet, and sauté for an additional 5-7 minutes. Stir in the minced garlic and cook for another minute.
  4. Brown the turkey: Push the veggies aside in the skillet and add the ground turkey, seasoning with paprika, cumin, salt, and pepper. Cook for about 5-7 minutes, breaking up the turkey as it cooks.
  5. Combine and cook through: Stir everything together in the skillet and let it cook for another 5 minutes to meld the flavors.
  6. Taste and adjust: Check the seasoning and adjust as necessary. Add more spices or vinegar if needed.
  7. Serve: Remove from heat and allow the hash to rest. Garnish with fresh herbs if desired.

Notes

This hash can also be made vegetarian by swapping turkey for black beans or quinoa. It stores well for meal prep and can be easily reheated.
