Ingredients
Scale
1 lb Ground Turkey
1 can Black Beans
1 can Kidney Beans
1 can Diced Tomatoes
1 Onion, chopped
1 Bell Pepper, chopped
2 tbsp Chili Powder
1 tbsp Cumin
1 tsp Smoked Paprika
Salt and Pepper to taste
Olive Oil
Instructions
Cook the Turkey: In a large pot or Dutch oven over medium heat, add a splash of olive oil and toss in your ground turkey. Using a wooden spoon, break it apart and stir until it’s browned and cooked through—this should take about 6-8 minutes.
Add Aromatics and Spices: Once the turkey is cooked, add finely chopped onions and bell peppers to the pot. Sauté for about 5 minutes, until softened. Sprinkle in your spices—about 2 tablespoons of chili powder, 1 tablespoon of cumin, and 1 teaspoon of smoked paprika. Stir everything together for 2 minutes to toast the spices.
Incorporate the Tomatoes: Pour in the canned diced tomatoes (and their juices!). Let it simmer for about 5 minutes.
Beans Go In: Now add your drained and rinsed beans into the pot. Stir well to incorporate all ingredients.
Simmer: Reduce the heat to low and cover the pot. Let your chili simmer for about 20-30 minutes.
Taste and Adjust: Before serving, taste the chili and adjust seasoning with more salt, pepper, or a squeeze of lime.
Notes
Garnish with sour cream, fresh cilantro, chopped green onions, and cheese for extra flavor.
