Spinach Ricotta Brunch Bake

A comforting and delicious Spinach Ricotta Brunch Bake, perfect for lazy weekends or special gatherings.

  • 8 large eggs
  • 1 cup whole milk
  • 1 1/2 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 5 ounces fresh spinach
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 cup cherry tomatoes, halved
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté your aromatics: In a large skillet, heat the olive oil over medium heat. Add the onions and sauté for about 5 minutes until they become translucent. Then, add the minced garlic and sauté for another minute.
  3. Add spinach: Add the fresh spinach to the skillet and sauté it for about 2-3 minutes until it wilts.
  4. In a large mixing bowl, whisk together the eggs until frothy. Then add the milk, ricotta, mozzarella, and Parmesan cheese.
  5. Flavor it up: Stir in the sautéed onion, garlic, and spinach mixture into the egg mixture. Sprinkle in the salt, black pepper, and Italian seasoning.
  6. Prepare your baking dish: Grease a 9×13 inch baking dish with cooking spray or olive oil. Pour your egg mixture into the baking dish.
  7. Top with tomatoes: Scatter the halved cherry tomatoes over the top.
  8. Bake in the oven for 30-35 minutes. The edges should be golden and the center set.
  9. Let it rest for about 5-10 minutes before slicing and serving.

Notes

This dish can be prepared in advance and refrigerated overnight before baking. It can also be frozen for easy portions.
