Shakshouka Toast

A delicious twist on classic shakshouka, served on crispy toasted bread with poached eggs in a spicy tomato sauce.

Ingredients

  • 4 slices of bread
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cups diced tomatoes (canned or fresh)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 eggs
  • Fresh herbs (like parsley or cilantro) for garnish

Instructions

  1. Prep your ingredients by chopping the onion and bell pepper, and mincing the garlic.
  2. Sauté the onions and bell peppers in olive oil over medium heat for about 5 minutes.
  3. Add garlic, ground cumin, and paprika; cook for 30 seconds until fragrant.
  4. Stir in the diced tomatoes and let simmer for 10-12 minutes.
  5. Season with salt and pepper to taste.
  6. Make small wells in the sauce and crack an egg into each; cover and cook for 5-7 minutes.
  7. Toast the bread slices until golden brown.
  8. Serve the shakshouka mixture on the toasted bread and garnish with fresh herbs.

Notes

For added richness, drizzle with extra olive oil before serving. Feel free to customize with additional vegetables or spices.
