Savory Sausage and Rice

  • 1 lb (454 grams) smoked sausage, sliced
  • 1 cup (240 milliliters) long-grain white rice
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon (15 milliliters) olive oil
  • 1 teaspoon (5 grams) smoked paprika
  • 1 teaspoon (5 grams) Italian seasoning
  • Salt and pepper to taste
  • 2 cups (480 milliliters) chicken broth
  • Fresh parsley for garnish

Instructions

  1. Prep Your Ingredients: Start by slicing your smoked sausage into bite-sized pieces. Chop the onion and bell pepper, and mince the garlic.
  2. Sauté the Sausage: In a large skillet or pot, heat olive oil over medium heat and toss in the sliced sausage. Sauté for about 5-7 minutes, until browned.
  3. Add the Veggies: Add your chopped onion and bell pepper to the pan and cook for another 4-5 minutes, until soft.
  4. Garlic Time: Add in the minced garlic, smoked paprika, Italian seasoning, salt, and pepper. Stir for about 30 seconds until fragrant.
  5. In with the Rice: Add the long-grain white rice to the mix and stir to coat the rice with the flavorful oils.
  6. Add the Broth: Pour in the chicken broth, bring to a gentle simmer, cover, and reduce the heat to low. Cook for about 20 minutes.
  7. Fluff and Serve: After 20 minutes, check if the rice has absorbed the liquid. If done, remove from heat and let sit for 5 minutes before fluffing with a fork and garnishing with fresh parsley.

Notes

For extra nutrition, consider adding vegetables like spinach or zucchini. You can also substitute smoked sausage with turkey sausage or switch to plant-based alternatives.
