Homemade Roasted Butternut Squash with Ground Beef

  • 1 small butternut squash, peeled and diced
  • 6 yellow potatoes, peeled and diced
  • 2 tbsp olive oil, for roasting
  • Salt and black pepper, to taste
  • 3 sprigs fresh rosemary
  • 1 lb lean ground beef
  • 3 large carrots, diced
  • 4 garlic cloves, minced
  • 1/2 white onion, diced
  • 12 tbsp olive oil, for sautéing
  • 12 sprigs fresh rosemary, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the butternut squash, yellow potatoes, and carrots by peeling and dicing them into bite-sized cubes.
  3. Toss the diced vegetables with 2 tbsp olive oil, salt, pepper, and 3 sprigs of fresh rosemary in a large mixing bowl.
  4. Spread the seasoned veggies on a baking sheet and roast for about 25-30 minutes, until fork-tender and golden brown.
  5. Heat a large skillet over medium heat and add 1-2 tbsp olive oil; cook the diced onions until soft.
  6. Add minced garlic and ground beef to the skillet, cooking until browned (about 5-7 minutes).
  7. Season the meat with salt, pepper, and the chopped rosemary, stirring well.
  8. Combine the roasted veggies with the cooked ground beef in a large serving bowl and mix gently.

Notes

Serve with grated Parmesan cheese or a drizzle of balsamic glaze for an extra touch!
